Baked Potato soup

As the days get shorter and the nights get colder, we find ourselves craving comfort food. A simple, wholesome, warming dinner and and a cup of your favourite herbal tea before going to bed will make you feel relaxed after a long day.

This incredibly creamy baked potato soup makes a good starter or can be a dinner in itself if served with baked potato skins and your favourite topping (we love it with chopped ham hock). Add a slice of toasted and buttered sourdough loaf for dunking.

Ingredients

  • 3 baked potatoes
  • 1 cup of cream
  • sea salt to taste
  • pepper to taste

Scoop out the insides of the baked potatoes. Sprinkle the skins with salt and bake at 200C until crispy.

Blend the potatoes and add the cream slowly, until it reaches the desired consistency. Season with salt and pepper. Add your favourite herbs, such as rosemary, thyme, or parsley.
